Year Two Day Twenty Four - Banana Apple Cake

Dear all,

Today I was feeling particularly virtuous but and decided to use up a couple of squishy bananas and apples that had been suffering in the heat. I found a marvelous recipe online and managed to soup it up a little with a knob of butter and a lot of love... http://www.sugarlaws.com/apple-banana-bread
It was quite easy but very different from any cake or loaf I had made before. First up, I sliced the apples and baked them in the oven after giving them a generous drizzle of honey. For the remaining ingredients,  I loosely followed the list below:

2 large, very ripe bananas

1/2 cup sugar
1/4 cup honey
2 eggs
1 3/4 cups all purpose flour
1 tbsp baking powder
1 teaspoon cinnamon
1/4 tsp nutmeg
1/8 tsp ground cloves
Pinch of salt

For the main cake, I mashed the bananas and added the sugar. I then added some butter to the sugar/ banana mix and creamed the mixture until fluffy. I then added the eggs and honey whilst stirring frantically and finally the flour, baking powder, salt, nutmeg, cinnamon and cloves. I then poured it all in to a pie tin ( We don't have a cake tin yet... the last one was part of the furnished Rupert's catalogue!)
Once in the tin, I lovingly laid the apple slices on top of the cake and popped in the oven.
Et voila! It had disappeared within 12 hours! I think could be described as a 'good sign'.
