Dear all,
Things are returning to normal after Deidre and Vince's wedding and after we got back to Collingwood, I began to get an extremely strong urge to eat pizza. Darren suggested a slice from 'pizza pizza' may suffice but then on reflection, advised that I got all out and make a pizza 'from scratch'.
Not ever one to say no to a challenge, I took the bull by the horns and set out for Loblaws to find all my ingredients. My evening was made even more joyous by bumping into Karla in the store. After a much needed catch up ( lots happens in three days), she was amazing in guiding me to key products I would need for my pizza making, including the dough.
So, back home and I set to work. I kneaded the dough ( very satisfying) and stretched it out onto an oiled pan.
I then fried up some onions and garlic, dumped in a can of diced tomatoes, a spot of puree and then peppers, more fresh tomatoes, mushrooms and jalapenos.
Darren then got to work trying to cut off a slap of mozzarella her had in the fridge. Needless to say, it was quite the endeavor and took various implements to prise away a chunk ready for the pizza.
I fried up one of the home-made 'hot and spicy' sausages that I bought from Stayner meats and after that had started to brown, I scooped the tomato mixture onto the dough, and on to of that, the sausage, more peppers, mushrooms and herbs ( basil and oregano) and then a wack of mozzarella and a dab of feta. Da dahhhhhh!
20 minutes in the oven and it was a triumph! We loved it and pizza is officially my new favorite thing to make!
