Vince was coming to town so we decided to throw something on the BBQ and in a rush of inspiration and wave of health consciousness, I found myself buying 3 HUGE salmon steaks from Loblaws (** note to self - check with Darren on the appropriate size of one singular salmon steak before purchase. The lady saw me coming. Each steak was around 15 oz. Too much for one person..)
I rattled together the 'Seafood Seasoning' from Ted's fabulous book - Napoleon's Everyday Gourmet Plank Grilling (Napoleon Gourmet Grills)Everyday Gourmet Plank Grilling using a wealth of ingredients including Lemon pepper and Dill Weed..
For the Salmon topping, I melted butter in a pan and then sauteed Red Onion until soft. I then added another massive knob of melted butter, fresh dill, fresh chives ( from the garden) lemon zest, lemon juice ( I left out the 'shredded shrimp' at this point-we would be cooking a number of the majestic Tiger Shrimp on top of the Salmon shortly anyway...)
I then added Japanese Panko Crumbs to the mixture as well as salt and pepper and mixed it all together.
I then placed the salmon steaks on the (soaked for many hours) cedar planks and then ladled on the onion-panko mixture on top of the steaks. I then laid a large Tiger Shrimp or two on top of the salmon, sprinkled a very generous portion of the seafood seasoning over the top of everything and they were ready for the grill. The boys were immediately perturbed when they saw the planks with Vince exclaiming, 'when is everyone arriving?'. 'Urmmmm', I replied, 'it's just us three Vince'. 'Oh Christ' says Vince, 'still working on the portion control related issues then?'.
But look look LOOK at what feast was bestowed upon us - the salmon was fantastic!!! Perfectly cooked by D, rich, spicy, salty, fishy ( in a good way), zesty, yum yum yum!
Ted has pulled out all the stops with this one and I would highly recommend it as a way of cooking salmon on the BBQ. Go Ted! http://www.tedreader.com/
