Year Two Day Sixty One - Ted Reader's Seafood Seasoning and Rub

Dear all,

I decided to whip up another of Ted's amazing rubs for our salmon steaks and thought we needed a jar of his 'Seafood Seasoning and Rub' found in - Napoleon's Everyday Gourmet Grilling
I started out with some Lemon Pepper - hard to find but fortunately we had an jar tucked in behind the hot chocolate. Lemon pepper is a blend of black pepper and granulated lemon zest (http://en.wikipedia.org/wiki/Lemon_pepper).

Ted's rub also called for:
Lemon Pepper
Kosher Salt
Dill Seed ( I had to settle for 'Dill Weed' after trawling the shops to try and find the 'seeded' version )
Ground Coriander
Dried Dill (Not a spot of dried Dill anywhere. Cwood residents must not like Dill?)
Sweet Paprika ( Gaaa Ted, where do you find all of these ingredients??? As an alternative, I used an old favorite, 'Paprika')
Granulated Garlic
Granulated Onion
Cayenne Pepper
Granulated Sugar
I mixed all the ingredients together and poured the seasoning into an old jam jar - perfect! It was delicious on the salmon, so fragrant and crispy. It's a keeper!
