Year Two Day One Hundred and Twenty One - Soft Shell Tacos

Dear all, 

Today, feeling a little fragile after a fabulous evening with Vince and Kerry, we decided to dig out the minced beef and make up some soft shell tacos! http://www.oldelpasomexicanfood.com/
I had bought a 'taco kit' a while back and was keen to try it out - it still involved 'actual cooking' but allowed for a couple of short cuts in the form of pre-mixed spice and 'sauce'. 
So, I browned the beef in a pan and immediately clicked into multi-tasking mode, so preceded to grate a generous chunk of cheddar cheese. 
Once the meet was browned, I drained the fat from the meat and added the spice mix. It smelt like there was cayenne in there. And maybe cumin. But i am sure it is a patented and *very secret* recipe. 


I then added a cup of water to the meat and allowed it to boil down, stirring frequently.
In the meantime, I popped the Tortillas in the oven to warm and cut up some tomato, lettuce, pepper and red onion. 
Once the meat had cooked down, we made up the Tortillas with all the ingredients and smothered the meat in the sauce that I had simmering on the stove. This is pure comfort food and delicious. I had four * woops*.
