After a blissful morning of coffee and newspapers, I was feeling particularly virtuous and decided to cook up on the featured recipes in the Toronto Star. I would cook the latest big thing in baking some 'red velvet' cup cakes.
When I told D of my challenge he responded immediately with 'how many?. I responded, 'hmmm, about 30?'. D replied, with authority, ' NO. That is why I asked'. You see, I am still struggling with my portion control and taking over our fridge with my various culinary experiments. I added that I would reduce the quantities and have a 'small' batch of cookies ready for D and Vince when they got back from Vince M's Stag Do.
Well.... turns out that I made 30 anyway.. and my goodness are those red velvet cupcakes debauched!!! Filled with all sorts of delectable delights from sour cream to red food colouring to lashings of cocoa and vanilla but the result was quite fantastic!
The icing was particularly debauched made with real white chocolate, cream cheese, icing sugar and vanilla: Very debauched indeed!
I made an effort to stick to the recipe in an attempt to pull of the broad-sheet special and I think they turned out okay.. certainly Vince and Kerry got a tray full and I am sure Darren's office will get to try a couple on Monday!
Lets play: Spot the cup cake in D's fridge!
If anyone would like the recipe, please do let me know [email: libbymourant@gmail.com] and I will forward it on!
And in other news:
1. The inn has paving! Well, on a small section of the road.. The Pretty River Inn is situated on Side Road 30/31 which is essentially gravel ( and very dangerous.. I had an 'incident' last year involving a freshly graded road and a ditch). The section between the 10th line and Highway 124 ( this is directed to all CWood residents) is now beautiful and new with the fresh gleam of asphalt radiant in the summer sun. It also allows passage at over 40km/h which is obviously very joyous for all locals.
