Day Forty Four - Scallops and Strawberry salad

Dear all,

Today I was back in the kitchen, and decided to raise the bar and invest in some 'fruit de mer'. Being Wednesday and therefore trivia night ( with the theme of sitcoms) , I was keen to ensure we were both powered full of omega 3 and 6 to maximize our chances against a strong field of fellow TV watchers.

So, I dropped into Loblaws en route back home after work and with trepidation went straight to the fresh fish counter. I was initially going to purchase King Prawns along with Scallops.. but on realizing they were going for $10 a pop, I decided this was a little pricey for what was essentially an experimental meal.


So, scallops it was, and with the help of the all knowing and ever patient D, I set to work in the kitchen. Inspired by the ultimate kitchen guru, Karla, I was attempting a salad made 'with strawberries' and it turned out very well. Balsamic vinegar, olive oil, shallots, basil lettuce and Strawbs were in the mix.
Please note: Salad is always much more tasty when eaten out of a casserole dish.


The scallops were most certainly the brainchild of D. We used some of the left over Double Smoked bacon, pan fried [with no fat - very good D-tip] and then wrapped the scallops in the bacon. Darren ( I watched over very carefully) then flash fried the scallops and served with new potatoes, the meal was ready to serve in around 15 minutes. MAGNIFICO!


Thank you again to Darren for being so patient throughout my domestic goddess training. He keeps on coming with those culinary gems: A true master.




Appendix 11X
Darren has an incredible pair of salad serving 'scissors'. Ingenious. It will deliver the perfect serving size AND even pick up the smallest of pine nut from the salad bowl.
