Day Two Hundred and Two - Sausage Making

Dear all,

This is the day that has been eagerly anticipated for weeks: Sausage Making!
We rigged up the grinder and made sure all the pieces were working and defrosted the huge bag of pork trim I got from the abattoir
Darren started to chop up the meat after we realized the chunks were so big we couldn't even begin to fit them through the grinder portal.
Vince had come down especially so with sausage-making-glee, we set to work and started grinding..
Now, let me tell you this one thing: Grinding meat is not easy. We all had a go, mainly because it really does take a lot out ones arms and matched the work out I had had 30 minutes before with my darling Karla at her spin class.


Once the meat was ground, we tipped it into a large bowl, mixed in some [shop bought]ground turkey and then followed Darren's Mum' magic sausage making recipe by throwing in herb after herb until we had a vast concoction of meaty goodness.
Here is a video of the mighty Vince and Darren at work in the kitchen! It took a while to get the hang of feeding the sausage meet through the casings. We had to load the intestines ( Jo, please look away) onto the sausage-stuffing attachment and then feed the meet through the grinder foe a second time. The meat was fed through the grinder and into the casings.

Vince and Darren took control and did a stella job! We tide off the sausages and popped them in the pan for eating right away! They were delicious and thank you so much to Joyce for the recipe! We even took a bunch around to Ana's for poker night. Sausages for all!
