My food preparation skills are most certainly improving! Tonight, the wonderful Vince popped in en route from Kingston so I made it my mission to cook up a feast. Darren had the genius idea of purchasing Lamb Chops form Costco. They were clearly stellar steaks as even the cashier commented on them. My challenge was to 'prepare them' using a 'marinade'. Both these phrases would normally strike fear into my heart.. but these days being the budding domestic goddess that I am, I took the bull by the horns and got stuck in.
Yet again, my acute problem with recognising accurate portion control came into effect.. I started off in making the marinade: I rubbed garlic and rosemary into the lamb and then doused them in red wine and olive oil. The chops were then left in the fridge for a couple of hours.
In the meantime, I had picked up a quart of strawberries from Meesters and made up an improvised Salsa for some makeshift Bruschetta. I chopped up the fresh strawberries, added parsley, yellow pepper, red onion, balsamic vinegar and salt and pepper and topped them onto warm baguette.. yum. I also made up the now standard fair of wrapped asparagus - this time adding hot salami and Montreal Smoked Bison to the prosciutto variation ( a big hit with the boys). There were also dips galore.. a feast for three!
For the main course, I rattled together some potatoes from a quick google search and they were a hit.
A very quick combo of paprika, chili powder, garlic, onion powder, olive oil and salt and pepper, bake for 40 mins et Voila!

We soaked the cedar planks for [at least] an hours (stops them from igniting: very important) and then placed on the lamb chops and left them on the BBQ. I had also made up a fabulous baked brie for second cedar plank which was covered in honey, blueberries, peach, apple and thyme and cooked on the BBQ. So delicious it was out of control.
The lamb chops were also fantastic. Above is the latest installment of our BBQ series. We will have to edit them properly one day...
We had so much food it was hilarious and the next thing I knew, I was passed out 'on' Darren on the sofa in a veritable food coma. Bliss!
